Denise Cedar, RD, LD, CDE

Registered Dietitian, Certified Diabetes Educator

Denise is a Registered Dietitian and Certified Diabetes Educator with 23 years’ experience in Medical Nutrition Therapy. She earned a Bachelor of Science in Dietetics at California State University, Fresno, in 1988; completed her dietetic internship at Community Hospitals of Central California in 1988-1989; and completed additional diabetes training at the International Diabetes Center in 1989. She has specialized in individualized nutrition therapy for people with digestive disorders since 1992. Her personal mission is to bring inspiration, compassion and empowerment to those on the path to optimal health.

    • Out-Patient RD and Diabetes Educator, Diabetes Living Program Coordinator:
      Individual outpatient appointments. Diabetes educator (MNT, insulin teaching, etc) as well as specialist in eating disorders, celiac disease/gluten intolerance, gastroparesis, and other GI diseases. Development of curricula for classes, teaching materials, presentations, etc.
    • In-Patient RD:
      In-patient coverage for med-surg and ICU units.
  • Oct1990-July 2011 Salem Hospital
    • Lead RD 12/08 to 7/2011
      Quality measures, productivity, staff scheduling, planning. Leadership re initiation of ADA Nutrtion Care Process.
    • Outpatient Nutrition Services
      Individual outpatient appointments, including development of MNT protocols for our OP services. Specialist in diabetes, eating disorders, celiac disease/gluten intolerance, gastroparesis, and other GI diseases. Development of curricula for classes, teaching. Public presentations; planning and coordinatation of public forums.

    • Diabetes Education RD
      Nutrition instructor for ADA-Recognized Diabetes Education Program from 1995-2009: Developed program nutrition curricula, trained new RD staff in diabetes MNT.
    • Co-developer of Sweet Moms Diabetes in Pregnancy Program in 1996.
    • Interim program coordinator Jan-Sept 2009.
  • 1989-1990 Endocrine Medical Group, an International Diabetes Center Affiliate, Fresno, CA.
    Outpatient RD specializing in diabetes, gestational diabetes, hyperlipidemias and eating disorders; nutrition classes and individual nutrition therapy appointments. Primary GDM/diabetes-in-pregnancy clinician in this practice.
  • 1988-1990 Cancer Awareness and Reduction through Education (CARE) Project, Fresno, CA.
    A National Cancer Institute-funded project to reduce the risk of cancer through nutrition intervention: genesis of the “5-a-Day” program.
    RD consultant: Presentations to healthcare professionals and the community, organization and leaderships of focus groups, event coordination, development of teaching materials, classes, and recipes.
